Ceviche (Peruvian Ceviche)

The "magic" happens through a process we call denaturing. We take the freshest white fish—ideally sea bass or sole—and "cook" it not with fire, but with the bright, vibrant acidity of our local limes. This creates the legendary leche de tigre (tiger’s milk), the citrusy, spicy elixir at the bottom of the bowl that wakes up every one of your senses.
We toss the fish with crisp red onions and the essential ají limo, a chili that provides a fragrant heat that dances on the tongue without overpowering the sea's delicate flavors. But balance is the secret of a great chef. We serve it alongside creamy camote (sweet potato) to soothe the spice and choclo—our giant-kerneled Andean corn—to provide a nutty, starchy crunch. It is cold, refreshing, and deeply revitalizing.
