Causa Limeña (Layered Potato Casserole)
Now, let me show you one of our most beautiful and artistic creations: Causa Limeña. It looks like a bright, colorful little cake, doesn't it? But don't be fooled—it is a sophisticated cold appetizer with a very patriotic heart. Legend says it was born during the war when women prepared these dishes to support the soldiers “por la causa” (for the cause), giving it the name we love today.
The foundation is our incredible papa amarilla (yellow potato). We mash these potatoes into a silky, smooth dough, but here is the secret: we season the mash with a touch of oil, plenty of fresh lime juice, and the vibrant ají amarillo. This gives the potato a zesty, aromatic kick and that iconic sun-kissed color.
We then layer this golden potato with a creamy filling—typically shredded chicken or tuna mixed with lime-infused mayonnaise—and slices of buttery, fresh palta (avocado). Served cold and garnished with hard-boiled eggs and black olives, it is a perfect harmony of textures. It’s refreshing, slightly acidic, and incredibly light. One bite and you will understand why it is a staple at every Peruvian celebration!
