Lomo Saltado (Stir-Fried Beef)

We sear tender strips of beef at an intense, smoky heat to lock in the juices, then quickly toss them with crisp red onions, juicy tomatoes, and our golden treasure: the ají amarillo. The "secret sauce" is a bold splash of soy sauce and vinegar that creates a rich, savory gravy right in the pan.

Now, I know what you are thinking—fries and rice? Yes! In Peru, we embrace the "double carb." We toss crispy golden potatoes directly into the stir-fry so they soak up that delicious juice, then serve it all alongside fluffy white rice.
