Pollo a la Brasa (Peruvian Rotisserie Chicken)
If you want to know what a Sunday afternoon feels like for a Peruvian family, you must visit a pollería. Pollo a la Brasa is more than just rotisserie chicken; it is an obsession, a national treasure that brings us all together around the table.
The secret lies in the sazón (the seasoning). We marinate the chicken for at least twelve hours in a rich, dark blend of soy sauce, garlic, cumin, and often a splash of black beer to tenderize the meat and deepen the color. Then, it is roasted in a special rotisserie over glowing charcoal. This unique "brasa" method gives the skin an irresistible, smoky crunch while keeping the meat inside incredibly tender and dripping with juice.
But listen closely: the experience is not complete without the sides. We serve it with golden, thick-cut fries, but the real star is the ají verde. This creamy, spicy green sauce—brightened with huacatay (Andean black mint)—is so addictive we put it on everything! It is smoky, salty, and soul-warming. One taste, and you will understand why we consume more of this than almost any other dish in the country.
