Rocoto Relleno (Stuffed Spicy Peppers)

 Welcome to Arequipa, our "White City" at the foot of the Andes! You are about to experience Rocoto Relleno, a dish that is as bold and fiery as the volcano that watches over us. At first glance, it looks like a sweet red bell pepper, but do not be fooled—the rocoto is famous for its legendary kick.

As chefs, we perform a ritual to tame this fire: we boil the hollowed peppers in water with sugar and vinegar until the spice becomes a gentle, fragrant warmth. Then, we stuff it with a savory recado—a rich mixture of juicy ground beef, onions, and garlic, balanced with sweet raisins, hard-boiled eggs, and salty olives. This "sweet and savory" contrast is the true heart of Arequipeñan cuisine.

To finish, we top the pepper with a generous slice of queso fresco and bake it until the cheese is bubbly and golden. We almost always serve it alongside a slice of Pastel de Papa (a creamy, layered potato cake) to soothe the palate. It is a masterpiece of texture and heat.
